Overripe Bananas

Just in case any of you are as tempted as my roommate (said she) was today to mash up those old bananas into muffins, here is my favourite recipe, taken from The Mother Hen's cookbook called, This Side of Heaven. It was a collection of church ladies' recipes handed down from generations past. Found this doozy in the fifth grade and have been whipping up the goodness ever since.

Best Banana Muffins (literally...BEST)

1/2 cup sugar
6 tbsp vegetable oil (you can substitute for 6 tbsp of apple sauce...that pear apple sauce tastes awesome in these)
1 cup bananas (ripe, mashed)
1 egg
1 1/4 tsp vanilla
1/2 cup bran cereal (flakes, buds...it doesn't matter)
*Mix these first six and set aside

Mix in separate bowl:
1 cup flour (you can use any old type of flour if you are on a restricted diet)
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 cup raisins or chocolate chips ([spending the night is] optional!)

Bake at 350 until golden brown for about 14 minutes.
You can make a loaf or muffins: either work out well.

Note: NO ONE can screw these up...they are foolproof.
